These are uberly delicious!! You won´t be able to eat just one and since I am living here in Mexico, these are an added treat that everyone loves... Mexicana or not!!
3 tablespoons lime juice
1/2 teaspoon lime zest
1/4 cup canola oil
1/2 cup sugar
2 1/2 tablespoons turbinado sugar
3 tablespoons tequila
1/2 teaspoon apple cider vinegar
1/4 teaspoon vanilla extract
1/4 teaspoon salt
1 3/4 cup flour
1/2 teaspoon baking soda
Glaze:
4 teaspoons lime juice
1/2 teaspoon tequila
3/4 cup powdered sugar
For sprinkling:
1 teaspoon sugar
1/8 teaspoon salt (I found sea salt is best)
Preheat oven to 350°F.
In a large bowl, combine the lime juice and zest, oil, sugars, tequila, vinegar, vanilla and salt. Stir.
Sift in the flour and baking soda, and stir until incorporated.
Flatten tablespoon-sized portions of dough on a parchment lined or lightly greased cookie sheet and bake for about 10 minutes, or until golden around the edges. Transfer to a wire rack to cool.
Meanwhile, make the glaze. In a small bowl, stir together all ingrediants. When the cookies are mostly cooled, spoon glaze atop each cookie, about 1/2 teaspoon of glaze each. Let sit for a few minutes (to let the glaze set a little bit, but not completely), then sprinkle on the sugar and salt mixture.
